Onion Pakoras & Potato Balls with flippin’ everything!

Have leftover mash from the Sunday roast? We always have far too many onions at home, maybe coz’ we’re Indian?! Here’s an easy snack to delight the whole family!


INGREDIENTS

For the Pakoras

Finely sliced onions

Oil to deep fry

1 cup flour (self raising or plain)

A splash of water

Cornerstone Rub

Chooks, Hooks n’ Hooves

Light n’ Psalty

Joppa’s Twist


METHOD

Mix the sliced onions and the rubs and salts together

Add a little water so the mixture is a sticky consistency

Heat oil in a pan or deep fryer

Make sure the oil is hot before dropping the mixture in: you can test it by dropping a small piece and it should sizzle and rise.

Drop medium sized pieces of onions and fry until evenly browned.

Remove safely and place on paper towel to drain excess oil.

For the Mash

Leftover mash

Oil to shallow fry

Cornerstone Rub

91 Shadows Rub

Joppa’s Twist


METHOD

Mix all the ingredients together

Heat a pan and pour some oil

Wait until oil is hot

Make bite sized balls with the mash

Spoon into the hot oil

Brown on all sides, to your liking


Serve both with your favourite condiment like chilli sauce & enjoy!
