INGREDIENTS
1.5-2kg beef ribs - room temp
Cornerstone rub
You'll also need some butchers paper
Serves 4, Total cook time 4 hours at 275 degrees F (135 degrees C)
METHOD
Get your fire going, ensure the BBQ is at stable heat.
Coat the ribs generously with Cornerstone.
Place into the bbq with the lid down and cook for 2 1/2 hrs keeping an eye on temp as you go.
Remove the ribs and wrap in butchers paper like a present - be careful this is hot and slippery, you might need an extra set of hands! Place back in the BBQ and cook for a further 1 1/2 hours.
Rest for 1 1/2 to 2hrs.
