Cornerstone Snapper with Joppa’s Twist Avocado Dressing

INGREDIENTS

For the Snapper

2 large snapper fillets

Cornerstone Rub

Olive Oil


For the Avocado Dressing

Packet of ready salad from the supermarket

1 avocado

1 egg yolk

Joppa’s Twist Salt

1 handful of chopped spring onions

1 teaspoon of red wine vinegar

1 handful basil * can be replaced with any herb of your choice, tarragon, mint, coriander etc

2 tablespoons water


METHOD

Snapper

Preheat the oven to  180°C

Coat the snapper fillets with olive oil

Massage the fish with cornerstone rub

Place the fish in aluminium foil, wrap well and cook for 10-12 minutes.


Avocado Dressing

In a saucepan, place spring onions and Joppa’s twist salt and fry for 2 minutes

Add red wine vinegar and water and let it boil for 4 minutes

In a blender, add egg yolk, avocado and basil

Pour the spring onions with the water and blend well.

Check for consistency, add more water if you prefer.

Blend until smooth.

Add dressing to the salad and mix well.


Serve & enjoy!
