Chooks, Hooks n’ Hooves Scrambled Eggs with Light n’ Psalty Salad

Want an easy colourful brekkie packed full of nutrients? Then these scrambled eggs are the way to go.


INGREDIENTS

4 eggs

1 avocado* optional

1 tomato* optional

5 baby beetroots (tinned ones are delicious too!)

Handful of spinach leaves

Half a capsicum diced

1 tablespoon crushed pineapple from a tin

1 teaspoon mayonnaise

1 tablespoon oil

Chooks, Hooks n’ Hooves Rub

Light n’ Psalty Salt


METHOD

Mix for the Salad:

5 baby beetroots (either whole or chopped)

Spinach leaves

Crushed pineapple

Spinach leaves

Mayonnaise

Diced capsicum

Light n’ Psalty to taste


Scrambled Eggs:

Crack the eggs into a bowl and whisk well until combined

Add chooks, hooks n’ hooves to your flavour liking

Heat a pan until hot

Pour oil on the pan, let it sizzle lightly

Pour the whisked eggs into the pan and fold from the sides *

*JR knows how to do this perfectly, and Cece just scrambles them willy nilly and she believes they both are different and yum!


Serve:

Smash the avocado on the plate

Slice the tomatoes

Sprinkle lightly with Light n’ Psalty


Plate the scrambled eggs and the salad.


Serve & enjoy!
