
Chicken Curry with Chooks, Hooks n’ Hooves

Daunted by the thought of making an authentic chicken curry? This shortcut might get you banned from India, but who cares? You know how to make a quick curry!
INGREDIENTS
1 Kg chicken
1 x 400g tin diced or whole tomatoes
1 tablespoon oil
1/2 onion sliced (a whole one if you’re feeling adventurous)
5 cloves of garlic
2 green chillies
Small piece of ginger diced
3 tablespoons natural yoghurt or coconut milk
1 cup water
Light n’ Psalty * To taste
METHOD
Add oil to a large saucepan or wok
Fry onions, garlic and ginger until onions are caramelised
Add the green chillies (slit them if you would like it a bit spicier)
Add the chicken and let it brown lightly
Add Chooks, Hooks n’ Hooves and let it coat the chicken- fry off for a few minutes
Add the tomatoes and a bit of water to cover half the chicken
Cover the saucepan, and let simmer until the chicken is cooked
If the curry is too thick, add the rest of the water.
Sprinkle Light n’ Psalty to taste
Add the yoghurt or coconut milk and let simmer for 5 minutes.
Serve with rice, rotis or the Indian Biriyani (link to recipe) in our other recipe.
